The only thing we did differently was draining it hanging in the bag made from cheesecloth. The recipe called this "Queso Blanco". I used to add balsamic vinegar to the hot curds. It looked very nice and tasted wonderfully well for so little work. A lot easier than mozzarella. I used to saute the cubes and serve them with omelet. Yummy.
